Roasted Vegetables

Toss with olive generous! These vegetables were roasted without a flame and were done in 25 minutes. A small fire would have created brown crispy edges and probably would have been done 5-10 minutes sooner. With a flame, the vegetables would have to be watched closely and rotated distracting chit-chatting allowed... (I speak from experience....)

...Simplicity at its best....delicious!
